Kora EVOO: the 2026 Sicilian harvest
Harvest, pressing and freight capital for a single-family Sicilian olive oil whose whole chain of custody is sealed on chain and checkable from the bottle.
The project
An olive oil label can say almost anything. Single estate, cold pressed, first harvest: none of it is checkable at the shelf, and the trade knows it. Kora ships a sealed provenance dossier with every bottle. Harvest date, bottling date, the customs declaration, the lab report, and a SHA-256 fingerprint that three parties have each signed with their own blockchain identity: the producer, the importer and Doremi Systems as digital notary. Matching fingerprints prove it is the same file; the timestamps prove the order it was signed in.
The oil comes from the Diliberto family groves between San Cataldo and Serradifalco, in the high interior of Sicily at around 600 metres. Hot days and cold nights slow the fruit and concentrate it. The 2025 crop was picked by hand and early, while the olives were still turning colour, which costs yield and keeps the polyphenols up: 334 mg/kg at the lab, against the 250 mg/kg the EU health claim asks for. Every crate reached the family frantoio within twelve hours and was cold-extracted the same day.
